Few examples I thought that a stamps with the following problems are errors:
Die cutting omitted;
Die cutting inverted;
Imperf pair;
Missing color;
Double hologram;
Hologram missing;
etc., etc.
I am not a money collector, but is the same situation with paper money? Are employees pilfering bad banknotes from printing process?

Michael is exactly right in what he points out, yet the categories that you list (Die cutting omitted; Die cutting inverted;Imperf pair;Missing color;Double hologram;Hologram missing) do contain legitimate errors.
Familiarize yourself with the Scott Catalogue of Errors by Stephan R.Datz for more info on the different types, along with cat. values. The broad area of collecting is called EFO's(Errors,Freaks,Oddities) and we do have members here that are involved in that collecting. (I personally love it, others are turned off by it.)
