How about watches and clocks and sundials on stamps. You could even include stamps depicting the sun, as that was once a way to tell time (with or without sundial).
I collect Great Britain and Australia, and am at the tipping point of collecting Hong Kong.
Regarding watches, I have a small collection of James Bond Villains Swatches -- one of them glows in the dark, which I always point out to my wife when we go to the cinema, as we wait in the dark for the movie to start.
I have been collection stamps most of my life. I get in there and rearrange everything every so often. It would be interesting to start collecting stamps from scratch and how a mature person would organise a collection having not collected stamps before. I started when I was 8 and over the years have had various different ideas on how to do things.
But I am sure you will have fun if you stick with it. It can be somewhat addictive.
